Mango Panna Cotta- A Summer Treat

Mango is my favorite fruit and now in season. I haven't given much recipes with mango, so thought of serving fresh mangoes in this delicious way, by making Mango Panna Cotta. This is a perfect summer dessert and quite easy to prepare if you have the ingredients at hand. Panna cotta was on my to-do list for a very long time and I finally made it. Panna cotta can have many flavours- cherry, strawberry, blueberry, chocolate etc.(So, do make it and don't forget to comment or subscribe! Njoy!)

Mango Panna Cotta- A Summer Treat

Ingredients:

For panna cotta:
  • Fresh cream- 1 cup ( I used Amul ready-made cream)
  • Milk- 1 cup
  • Sugar- 1/2 cup/ 2 tbsp.
  • Vanilla essence- 1 tsp.
  • Gelatin- 2 tsp.
  • Water- 2-3 tbsp. (For melting the gelatin)

For mango gelee:
  • Mango puree- 2-3 mangoes (Approx. 1 1/2 cup)
  • Sugar- 2 1/2 tbsp. (according to the sweetness of mangoes)
  • Gelatin- 2 tsp.
  • Water- 2-3 tbsp. (For melting)

Method:

For panna cotta:
  1. Add gelatin to a small bowl containing the water (warm). Keep aside till the gelatin melts, becomes clear and there are no lumps. You can also melt the gelatin in the microwave for quicker results.
  2. Mix the milk and fresh cream in a stainless steel vessel and bring to a boil. Add sugar and simmer till it dissolves completely. Stir in between and turn off the heat. Add vanilla essence to the mixture.
  3. Add and mix the gelatin till it is completely dissolved. Let it come down to room temperature.
  4. Pour the mixture in serving glasses/bowls. Cover with plastic wraps and refrigerate for 2-4 hrs. or until it is set properly.
For mango gelee:
  1. Mix gelatin in cold water. Cut mango into small pieces and puree them in the blender.
  2. Add sugar to the mango puree and simmer till the sugar dissolves properly.
  3. Combine the gelatin and mango mixture until a smooth paste is formed and the gelatin has dissolved properly, without any lumps.
  4. Let it cool down and then pour over panna cotta layer. Allow it to set in the refrigerator for 3-5 hours. 
  5. Serve chilled. You can garnish with fruits or other toppings, or have it as it is.

Choco-Cookie Milkshake-Beat The Summer

The scorching heat of summer can finally be felt. The temperature of Kolkata has become very high. During daytime, going out of the house is really tiring and stuffy. Sitting in a air-conditioned room, sipping a cool refreshing drink feels like Paradise. Almost everyone loves chocolate, so this drink is the perfect one for the hot Summer season as well as for children. Hope you like it! (And don't forget to comment and subscribe! Njoy!!) My ingredients

Ingredients:


  • Oreo cookies-12
  • Milk- 2 cups
  • Vanilla ice-cream- 4 scoops
  • Sugar- 1 tsp.
  • Chocolate syrup- 8 tbsp.
  • Ice cubes- As required

Method:

1. Mix all the ingredients- 10 Oreo cookies, milk, vanilla ice-cream, sugar, chocolate syrup and ice cubes in a mixer/blender. Keep aside.
2. Remove the cream from between the biscuits. Crush them to use later as a garnish.
3. Serve chilled. Garnish with the crushed cookies. Njoy! :)

Gujiya-A Sweet Holi Snack

I think you have got to know a lot about Holi from my last post. Gujiya is a fried and sweet snack commonly relished during the colorful festival of Holi. I baked my gujiyas to make them healthy and to give them a twist, instead of the conventional frying. You can also dip the gujiyas in sweet sugar syrup, but I kept mine plain. Hope you like them! Ingredients:



  • Maida- 1 cup
  • Sooji/Semolina/Rava- 2 tbsp.
  • Ghee- 2 tbsp.
  • Kismis/raisins - 3 tbsp
  • Almonds - 50 gms (cut into thin slices)
  • Milk (Normal/Cold)- 1/4 cup
  • Khoya/Mawa(For filling)- 50 gms.
  • Sugar- 1/2 cup

Method:

1. Add sooji, maida, ghee and milk in a bowl and mix well to make soft and firm dough.
2. Put khoya in a deep frying pan and fry to a light brown colour adding sugar, kismis and almonds. Let it cool.
3. Take the dough and roll it out in the size and shape of a poori.
4. Take the mould (for gujiya) and place the rolled out dough in the mould. Add roasted khoya and sugar in the middle. Press and close the mould.
5. Place the moulds on the baking tray. Bake at 180 degrees Centigrade for 30 minutes. 
6. Serve garnished with almonds and pistachios( It can also be stored in an air tight container for even a month).

Ras Malai-Holi Special !!

Holi is a sacred festival of not only Bengalis but of all Indians. It is the "festival of colors". In Indian mythology, the story goes that a boy named Prahlad emerged victorious against his evil father Hiranyakashyap by worshiping Lord Vishnu instead of his father who forced everyone to worship him. Prahlad was also told to enter a burning fire sitting on his sister Holika's lap. Holika had a boon of not getting burnt but it was applicable only when she went in alone. Holika died and Prahlad came out untouched because of his true devotion. This is the story behind Holi.

Each festival has special customs and with customs comes food. Rasmalai, laddoos, kheer etc. are certain desserts which are common to Holi. I will post some more Holi snacks recipes. Till then, have rasmalai and enjoy! Happy Holi!! (And don't forget to comment or subscribe! Njoy!)




Ingredients:

For rosogollas: (makes 12-15 balls)

  • Milk - 4 cups
  • Lemon juice - 1/4 cup
  • Sugar - 1 1/2 cup
  • Water - 4 1/2 cup

For milk mixture:

  • Milk - 1 litre
  • Sugar - 1 cup or more (according to your taste)
  • Cardamom powder - 1/2 tsp
  • Almonds & pistachios - for garnishing 

Method:

1.Boil milk in a heavy bottomed vessel. Once its boiled, add the lemon juice and you will find that the milk will curdle and the whey will seperate. Then drain it in a thin muslin cloth or handkerchief.
2. Hold it covered with cloth in running water.Drain the excess water by pressing the cloth so that no water remains. 
3. Remove the chana in a plate, add little cardamom powder and knead it gently for 8-10 mins. so that it turns absolutely soft.
4. Make small smooth balls of equal size from the dough.
5. Next make the sugar syrup by placing a pressure cooker in the stove and adding sugar and water. When the sugar dissolves and comes to a boil add a pinch of cardamom powder.
6. Slowly add the paneer/chana balls to the boiling sugar syrup. Place lid and pressure cook upto 1 whistle and a few more minutes.
7. Turn off the heat and remove the lid. The balls would puff off to double the size.
8. Take out the rasogollas  from the syrup and squeeze them lightly and keep aside.

Making rasmalai :

1. In a sauce pan boil milk on low medium heat till it reduces to half.stirring constantly .
2. Add sugar till it dissolves completely. Now add cardamom powder and mix well. You can also add saffron soaked in 2 tbsp of hot milk.(I didn't use saffron)
3.Slide the rosogollas in the mlik and cook for 10 -12 mins.
4. Let it cool. Garnish with chopped almonds and pistachios and serve chilled.

Microwaved Chocolate Chip Muffins

Well, sorry folks but I was really busy for a few days of Christmas so could not post anything for a few days. Picnics, Christmas parties, cakes and bakes kept me pre-occupied. However, in the midst of all of this my daughter did find time between her hectic teenage life to bake something. She loves muffins and she wanted to make some.So, this whole recipe was hers. She did everything by herself, even the pictures were taken by her. Hope you like it ! (And don't forget to comment or subscribe ! Njoy !!)

Microwaved Chocolate Chip Muffins

Ingredients :


  • All Purpose Flour/Maida-1 cup
  • Baking Powder- 1/4 tbsp.
  • Pinch of Salt
  • Pinch of Baking Soda
  • Icing Sugar- 1 cup
  • Butter- 50 gms, melted in microwave (For best results)
  • Eggs- 2
  • Vanilla essence- 1 tbsp.
  • Lukewarm water- 1/4 cup
  • Chocolate chips- 2-4 tbsp.
  • Cocoa powder - 1 tsp. (Optional)

Method:

1. Sift flour, baking powder, baking soda and salt.
2. In a seperate bowl, beat eggs and to it add vanilla essence, butter and icing sugar and cocoa powder and fold gently.
3. Now slowly pour the sifted flour mixture to the egg mixture and mix gently. If required add lukewarm water to the mixture.
4. Fill the microwave muffin maker with this mixture till 1/4 of its size and sprinkle chocolate chips on top.
5. Put it in the microwave on high for 2 mins. 
6. When done cool them for 10 -15 mins. and Njoy!

Trifle Pudding

This was my first attempt of trifle pudding. It looked and tasted really yummy. This is a traditional delicious English dessert. It is usually made by layering sponge cake, custard, fruits, cream and sometimes jelly. Hope you like it ! (And don't forget to comment or subscribe! Njoy!)

Trifle Pudding


Ingredients:


  • Sponge cake - 1
  • Fruit jam - 2 tbsp
  • Biscuits - 6/7 (crushed)
  • Seasonal fruits - 1 cup (chopped)
  • Whipped cream(sweet) - 200 gms

For custard:


  • Sugar - 1/2 cup
  • Boiled milk - 2 cups
  • Vanilla custard powder - 4 tsp

Method:

1. Dissolve milk, sugar and custard powder, in 2 tbsp of milk/water and microwave for 5 mins. at 70% power. Allow to cool.
2. Cut the cake from the centre into 3 layers.
3. Arrange vanilla sponge in a pudding dish, apply jam and spread custard. 
4. Sprinkle fresh cut fruits. Arrange two layers of sponge cake on top. Spread whipped cream and decorate with crushed biscuits and tinned cherry. 
5. Allow to set in refrigerator and serve chilled.

Its Christmas time! Everywhere cakes, tarts, pies and what not.  So I was thinking to make something I had never done earlier. While going through a magazine, I saw a beautiful chocolate cupcake-tart recipe and thought of giving it a try. Oh! I was so happy. It turned out so good. A deep chocolate flavoured crust, with rich chocolate filling topped with shredded chocolate balls. Really Yum!
So, friends I thought of sharing this beautiful recipe with all of you. Try this and I'm sure u would love it. (And don't forget to comment or xubscribe! Njoy! )


Chocolate Bucket


Ingredients:



  • Maida/all purpose flour - 150 gms
  • Powdered sugar - 2 tbsp
  • Butter - 100 gms
  • Cocoa powder - 2tbsp
  • Dark chocolate bar 
  • Honey - 2 tbsp
  • Fresh cream - 2tbsp

Method:

1. Make a soft dough mixing butter, flour, powdered sugar, and cocoa powder. 
2. Make small balls from the dough and carefully fit it onto the tart mould.making sure it is fitted along the whole bottom of the pan. 
3. Use a fork and make pricks into the tart crust, covering the entire bottom to avoid the dough from rising.
4. Bake in convection mode at 200 degrees for 15-18 mins.By cooling ,these tarts can be preserved in the fridge for 2-3 months.
5. Place a mixing bowl over a pot of simmering water, and add the dark chocolate into the bowl and wait for it to melt. When thuroughly melted , leave the bowl over the hot water and remove it from the heat.
6. Now add the cream, honey, butter and mix it nicely warming them up over a medium heat but be careful not to boil. 
7. The filling needs to be cooled and then chilled in the refrigerator until quite thick
8. Put the chocolate filling into a piping bag, fitted with a star tip, and pipe swirls of the filling into the chocolate bucket. Garnish with chocolate shavings or colourful balls and a red cherry on top. N'joy.
9. If not serving immediately, cover and store in the fridge.

Cakes, gifts, joy, stockings full of candy, family-that's what makes up Christmas. Christmas as a whole is a sweet festival. So, I thought this whole month of December, (Or what is left of December :P)      I will be posting Christmas recipes.

Microwaved Walnut Chocolate Cake

Christmas recipes does not mean only cakes, but also relishes, cookies, and other sweet dishes. Some drinks and beverages will also hit the spot. So, wait and keep reading my blog. ( And don't forget to comment or subscribe! Njoy! )

Ingredients:


  • Eggs - 3 
  • Oil - 1 cup
  • Maida/all purpose flour - 1 cup
  • Castor sugar - 1 cup
  • Baking powder - 1 tsp
  • Cocoa powder - 4 tsp
  • Handful of walnut
  • Milk - 1/4 cup
  • Vanilla essence - few drops

Method:

1. In a mixing bowl place eggs, vanilla essence, oil and beat it lightly.
2. Sieve flour, castor sugar, cocoa powder and baking powder into the mixing bowl. 
3. Add milk and walnuts and mix well. 
4. In a greased microwave safe cake dish, pour the batter and microwave for 5 mins at 100 % power. 
5. Garnish with chocolate icing and fresh fruits.

Mango Jam Cookies

Jam filled cookies! I really love them. Its also my daughter's favourite. I surprised her yesterday when she came back from school and saw those yummy cookies. They are just delicate and melt-in- your mouth buttery. So easy to make and  yet so delish. I added mango custard to give them a different taste. Try them for christmas. Would really love them.

Ingredients:


  • Maida/All purpose flour - 11/2 cup
  • Powdered sugar - 1 cup
  • Baking powder - 1 tsp
  • Custard powder(mango flavour) - 1 cup
  • White butter - 50 gms
  • Milk - 2 tbsp
  • Jam - 2 tbsp(strawberry /mixed fruit)
  • Coloured chocolate balls - for garnishing

Method:

1. Preheat oven to 180 degree C.
2. Mix together sugar, butter, custard powder. Cream these together until light.
3. Combine baking powder and salt to the maida/flour. Mix nicely. Add to the sugar mixture alternately with milk, ending with flour mixture. The dough should not be too stiff nor too soft.
4. Roll dough into 1" balls. Now place the balls 2 inches apart on ungreased cookie sheets.
5. Use the finger to make a hole in the center of each cookie. Fill the hole with jam.
6. Bake for 8-10 mins. in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.
7. Serve with coloured chocolate balls.

Ice-Cream Gulkand With Gulab Jamun


Few days ago, my nephew had a fireless cooking competition in his school. This was the dessert they  made. It was my creative idea. Amazingly it won the best dessert among all sections of the grade. So, I hopeyou like it! (And don't forget to comment or subscribe! Njoy!)

Ice-Cream Gulkand With Gulab Jamun

Ingredients:


  • Gulab jamun-4-5 pieces (Sweet-usually round with sugary syrup)
  • Vanilla Ice-cream- 2 scoops
  • Dry rose petals- For garnishing
  • Gulkand- Rose petal jam (Available in the market)


Method:

1. Cut the upper portion of the gulab jamun and scoop out the inner portion of the gulab jamun. It should look like a small bowl.
2. Mix the gulkand, ice cream, rose petals and the inner portion of the gulab jamun in a bowl. Mix it very nicely.
3. Refrigerate the mixture. After it becomes a bit cold and  stable, fill the mixture inside rhe cut gulab jamuns. Garnish with rose petals. Serve chilled.

Rabri is a sweet sugary experience in every bite. This is dessert relished by each and every person out there! So, what are you waiting for- Just follow the simple instructions of this recipe and take a cool sip/bite of the delicious rabri ! ( Just don't get too excited and forget to comment or subscribe! Ingredients:

  • 1 litre full cream milk
  • Few strands of saffron
  • 1 cup condensed milk
  • Handful of pista and almonds (chopped)
  • 1/4 tsp cardamom powder

Method:

1. Put milk, condensed milk, saffron and cardamom powder in a microwave safe dish. Microwave for 10 mins at 70 % power.
2. Add pistas and almonds and microwave for 10 mins at 70% power till thick.
3. Garnish with saffron, pistas and almonds. Serve chilled.

Chocolate cake with rich Chocolate frosting

Chocolate cake- One of the basics of baking . But the frostings and moistness matter the most. The cake should be firm enough so that it does not crumble while cutting. Well my frosting is very rich so those who are dieting, restrict yourself to this cake. The creamy and delicious frosting will be enjoyed by all. Birthdays, parties,dances- This is the perfect sweet dish. Njoy! (And don't forget to comment or subscribe!)

Ingredients For Chocolate Cake:

  • 4 eggs
  • 11/2 cup maida or plain flour
  • 2 tsp level baking powder
  • 1/4 cup cocoa
  • 11/4 cups powdered sugar
  • 1 cup oil
  • pinch of soda-bicarb
  • 1/2 tsp vanilla essence

For Frosting:

  • 4 slabs(40 gms each) of dark chocolate(Bournville)
  • 2 tbsp oil
  • 4 tbsp (level) icing sugar
  • 1/4 cup milk / thin cream

Method:

1. For the cake , sift maida, cocoa, baking powder and soda.Keep aside.
2. Beat eggs and sugar with an egg beater or hand mixer until white and frithy and the volume increases by 4 times.
3. Add oil gradually, beating all the while. Add vanilla essence. Mix well. 
4. Fold in the maida, using a wooden or metal spoon by cut and fold method. Mix gently. Add maida in 2-3 batches.
5. Grease and dust an 8" cake tin. Transfer the prepared mixture to the greased tin.
6. Heat oven to 200 degree. Bake the cake for 35-45 mins. or till the cake is baked. Check by inserting a knife.
7. Remove from oven. Unmould and cool on a cake rack for frosting. 
8. For the frosting, break the chocolate pieces. Place in a small saucepan over boiling water until chocolate melts. 
9. Stir in the icing sugar, milk or cream. Remove from heat, beat till smooth.
10. Cut the cake into half. Spread some of the frosting over the lower layer of the base cake, place the top half back on the frosting. Press gently. 
11. Spread the remaining over the top and sides of the cake. Coat well. Decorate the cake with chocolate curls and fresh mint sprigs.
