Egg Hochpoch With Spring Onion And Veggies 

I had this for dinner yesterday. I was having fever and didn't have the energy to make up something new. I grabbed some eggs, veggies and my favourite-spring onion. I tossed them in to the pan with some sauces and spices. Remarkably it tasted awesome. I didn't know it would turn out this good. Do give it a try. ( And don't forget to comment or subscribe! Egg Hochpoch With Spring Onion And Veggies

My ingredients


  • Spring onions/scallions - 150 gms(cut into small pieces)
  • Potato - 1 (big)Cut in long slices like fries
  • Cauliflower - few florets
  • Green peas - 8/10
  • Onion - 1 (sliced)
  • Egg - 3 
  • Turmeric powder- 1/2 tsp 
  • Red chilli powder - 1/2 tsp
  • Tomato puree - 1 tsp
  • Panch phoran - 1/2 tsp(Consisting of five whole spices- fenugreek, nigella, mustard, fennel and cumin)
Panch Phoran

  • Salt - to taste
  • Sugar - 1` tsp
  • Ghee/Clarified butter- 1 tbsp


1. Boil the veggies(potato, cauliflower, peas)and keep aside.
2. Heat oil in a pan and add the panch phoran for tempering. When it starts cracking, add the sliced onions.
3. When the onion turns transparent, add the boiled veggies and mix nicely. Stir, and add the spring onions.
4. Stir for a few minutes and add turmeric powder, chilli powder, tomato puree, salt and sugar. 
5.  Break the eggs and add to the veggie mixture.Mix nicely and slowly. 
6. Add ghee from top and serve with  hot rice or parathas.
