Chicken Hot and Sour Soup with Grilled Chicken Sandwiches

Ingredients:


  • Chicken stock/water - 4-5 cups
  • Chicken (shredded) - 1/2 cup
  • Garlic - 2 flakes(crushed)
  • Cabbage - 1/2 cup(shredded)
  • Carrot - 1 small (grated)
  • Spring onion - finely chopped
  • Cornflour - 2-3 tbsp
  • Soya sauce - 1 tbsp
  • Vinegar - 1 tbsp
  • Red chilli paste - 1 tsp
  • Pepper - 1/2 tsp
  • Salt - 1/2 tsp
  • Ajinomoto - 1/2 tsp(optional)
  • Oil - 2 tbsp


Method:

1. Heat 2 tbsp oil in a pan. Add garlic and stir.
2. Add cabbage, carrot, spring onion and shredded chicken. Saute for 1/2 minute.
3. Add the chicken stock.
4. Add soya sauce, vinegar, chilli paste, salt, pepper and ajinomoto to the stock.Stir and give it a boil.
5. Mix cornflour with 1/2 cup water and add to the soup. Boil.
6. Cook on low flame for 4-5 mins. till the soup thickens and the raw smell of cornflour disappears. Serve hot.


Grilled Chicken Sandwiches



Ingredients:

Chicken breast - 1 (Boiled and flaked)
Mayonnaise - 5-6 tbsp
Onion - 1/2 (Chopped very finely)
Brown bread slices - 8
Butter - 2 tbsp

Method:

1. To boil the chicken, place the chicken breast with 1/4 cup of water and a little salt in a pressure cooker and give 2 whistles. Remove from heat. Cool and shred chicken into very small pieces.
2. Keep the shredded chicken and the chopped onion in a bowl and add enough mayonnaise to get a filling.
3. Adjust seasonings of the filling by adding a dash of pepper, salt and mustard. Keep the seasonings of the filling a little strong because it may bland when applied on the bread.
4. Butter the bread slices on one side. Keep aside.
5. Spread the mixture on the unbuttered side of the bread slice and cover with another slice, keeping the buttered side outside. Repeat with other slices to make 4 sandwiches.
6. Heat your sandwich toaster or the oven to 220 degree C. Place the grill in the center of the oven. Place the sandwich on the grill or in the toaster and grill for 10 mins. or till the sandwiches are crisp and golden.
7. Cut into desired shape and serve hot with ketchup.
Note:
When placed on the grill in the oven, press on the grill to get the lines or impressions on the sandwich.
